This bacon comes from the pork shoulder and is the perfect mix between Canadian Bacon, made from pork loin that is VERY lean, and pork belly bacon that is fairly fatty.

Cured and Smoked Pork Loin. Very Lean.

Salted Pork

Savory Salt pork is cured pork belly that is brined but not smoked and is traditionally used in baked beans, chowders, chili, gumbo, jambalaya and the like.
